tasting: a delicious all Pinot Noir Rosé Champagne. Lovely vibrant pink colour with a creamy mousse. It has plenty of ripe strawberry and cherry fruit, together with some toasty hints. Most Rosé from Champagne is made by blending in red wine to a white base wine but Paul Herard make it the more labour intensive way of allowing the base wine to ferment on its skins, just long enough to develop some colour.
